- The Zähringer winery looks back on over 175 years of familiy-history. But despite all the tradition, the ideas remain young. The winery was one of the pioneers in switching to organic in the 80s and has been Demeter certified for almost twenty years. As one of the largest organic wineries in Baden, the Zähringer winery does a lot of development work and research for sustainable viticulture in Baden. Not only are Burgundy and Gutedel at their best here, but people are also venturing into southern grape varieties such as Merlot, Viognier and Cabernet Franc. Fabian Zähringer is convinced that the cultivation of biodiversity in the vineyards determines the character of his wines.
