- The Romans settled here, preceding the Cistercian lay monks who, from the 11th century until the French Revolution, produced wine in this Novitiate, hence the name Novi.
Siste et ora viator ( Sit down and pray, traveller )
Inscribed on the foundation of a calvary in the grounds of the estate, it bears witness to the fact that this place was once a refuge for pilgrims on the Arlatensis route to Santiago de Compostela.
Today, this 100-hectare estate, including 50 hectares of organically-farmed vines, is set in a ring of garrigue with a stunning view of the sea and the Etang de Thau. It is a benchmark for Grés de Montpellier and Igp Oc.
The wines of the Mas reflect its arid terroir swept by the tramontana and the sea spray, mixing generosity and freshness. We are constantly seeking to express the power and richness of the terroir while maintaining a high level of drinkability. To fully appreciate our wines, you must take the time as the ancient Cistercian guardians of the domain recommended: "Siste et ora Viator".
