- Usiglian del Vescovo is an organic winery, located in Palaia, Pisa and belonging to the denomination “Terre di Pisa” in Tuscany.
Our concept of organic for us means “green acting”. We are committed to preserve the fertility of the soils and we strongly believe in biodiversity. Our ethical and sustainable approach reflects in all our choice, from selective mowing which generates organic manuring and active fertility to our sandy soil, to very low yield per hectare and differentiated pruning of each vine aiming at the best sensorial harmony. In our vineyards, we use organic fertilizers, green manure, permanent lawn, and manure. We do not carry out any weeding, unless those mechanical under the vine and we do not use synthetic products. We mainly use energizing products and helicocytors (these are substances promoting the natural and immune defences of the plants) made from vegetal extracts, such as macerated prickly pear, thyme and Pistacia lentiscus essential oils and chestnut tannins. In our cellar, we exclusively use neutral yeasts and organic nutrients. We do not use any clarifying substances; we use only cold and bentonite. We do not carry out any sieving, rather filtrations. The sulphurous level is kept at 70mg/Liter. Last, but not least, we use rainwater collected from the roofs for agricultural purposes in order to optimise the consumption of this precious resource for mankind.
Beside our 360°-organic approach, our cellar boosts a thousand-year-old history, dating back to Middle Ages, and particularly to 1078, when the powerful noble lady, Matilde di Canossa, donated the feud of Usigliano to the bishop of Lucca, which, over time, became better known as "Usiglian del Vescovo".
Our vineyards are located along a crag at about 250 meters (820 feet) above sea level and they are divided in a lot of small plots with different exposures, giving birth to a big heterogeneity in the behaviours of the vine. Grapes are collected in different phases, thus supporting and respecting the times of each vineyard. Vinification takes place separately too.
Our soil is the result of a transformation in millions of years, a unique soil which in the Pliocene era (5 million years ago) was an ocean bed. Today this bed is sandy and fertile, rich in marine fossils and microelements.
Usiglian del Vescovo expands on 160 hectares (400 acres) of which 25 (62 acres) are vineyards of Sangiovese, Merlot, Cabernet Sauvignon, Syrah, Petit Verdot, Chardonnay and Viognier, and 15 hectares (37 acres) of olive trees.
Usiglian del Vescovo boosts a strong identity and connection with its terroir. In all our wines, you can taste the sense of our place and we are proud to be a farmer and a grower.
