HISTORY DOMAINE LA JASSE CASTEL
A priori nothing destined me to one day be a winemaker and everything led me there.
Journalist, teacher, writer, for wine, the desire to create a wine estate came to fruition in 1997 following a revealing winemaking, with Laurent Vaillé at the
domaine de la Grange des Pères.
Love at first sight for my first vines located 400 meters on the Causse de
Montpeyroux, and for a 17th century sheepfold (the Jasse de monsieur Castel), transformed me from a city dweller into a winemaker. Facing the winds, and bathed in sunshine, the
Jasse Castel looks out over the Hérault valley.
The 12 ha vineyard, managed organically, is divided partly into the Languedoc Montpeyroux appellation, partly into Terrasses du Larzac, and recently into IGP Saint Guilhem le Desert.
The concentration and richness of the red wines are due to the low yields (15 to 25 hl/ha). Harvested by hand and then destemmed, the red grapes are vatted by gravity using a small stainless steel wagon that is raised and then emptied above the vats. The reds ferment following a slow extraction during long vatting periods (four to five weeks).
The vinifications are carried out without the addition of sulphur. This vatting without crushing the grapes limits the addition of SO2 during bottling.
The blends are made while respecting the terroirs and grape varieties, to produce powerful, elegant and original wines.
Five reds, two whites, a rosé, a marc brandy and a cartagene, make up the
range.
However, if this profession is rich, complex and exciting, it is also very often
solitary. In 2009 I created an association of women winegrowers in Languedoc
Roussillon (Occitanie) which is a real dynamic for the 21 Vinifilles who meet there. Our
exchanges, our advice, our differences, our friendships, are a daily support.
