- KAGATOBI is named after the in-house firefighters of Kaga (ancient name of Kanazawa area) mansion Edo (ancient name of Tokyo) branch, who were tough and powerful, highly skilled but short-tempered. They were known as "Cool" firefighters, and always popular among people in Edo. Brewed with high quality sake rice and our groundwater, its wide varieties of tastes will gratify your many demands on sake flavors. Kagatobi Organic Junmai is brewed with organic sake rice which is cultivated by our contracted farmers, the blend of Yamadanishiki, Kinmonnishiki and Fukunohana sake rice. This sake is certified organic in the USA, EU and Japan. This sake has the gentle aroma of steamed rice hint of coffee and almond. Good balance with sweetness and acidity. Goes well with any dishes using soy beans or sesami(e.g. Grilled Tofu,Tofu Salad, Goma Tofu or Hot Pot with Sesami Sauce) or grilled white fishes or vegitalbles.
