~The First Organic Imo Shochu in Kagoshima~ 1. Imo, 2. Rice, 3. Yeast, 4. Koji, and 5. Water, High quality of Five natural materials. Oishi Shuzo is the first shochu distillery in Kagoshima to receive JAS organic certification. The raw materials are produced without chemical fertilizers and are using cultivation methods that minimize the burden on the environment as much as possible. The manufacturing process also meets strict inspection standards. We effectively utilize organic Beniharuka that do not meet the standard (too large), which are originally grown for eating, such as for roasted sweet potatoes (Yaki-imo), for making shochu. The shochu lees left over after shochu production are used as organic fertilizer, and the aim is to use that fertilizer to produce organic sweet potatoes. The aim is not only to create a sustainable shochu cycle, but also to create a regenerative one.
