Tasting notes
The brewery itself grows and polishes its own rice. This is a completely organic Junmai Ginjo made by this brewery that is dedicated to the pursuit of the real thing. This is the first sake brewery in Japan to be certified under JAS-Organic, USDA National Organic Program, and EU organic regulation ! This is an organic Junmai Ginjo sake made from 100% organic Yamadanishiki rice, which is rare and not generally available. It has a refreshing pear-like aroma and a complex, layered flavor, but also a clean aftertaste. The natural flavor is perfect served lightly chilled as an accompaniment to meals.
