- Founded in 1625, Fukumitsuya is the oldest sake brewery in Kanazawa city. We make sake using only fine quality sake rice from our contract farmers and our “Hyakunensui”, natural mineral water which begins as rain and snow falling at the foot of the Mt. Hakusan, around 50km from our brewery. With these high quality ingredients, the highest level of craftsmanship and traditional family secret recipe, the brewery has enjoyed a reputation as one of the finest sake breweries in the area.
Currently, we also produce certified organic Junmai sake, with organic sake rice from contracted farmers and brewed in our cellar, which is also certified as organic facility. In 2022, we have acquired kosher certification for all of our sake brewed in our cellar and will further expand its sales channels overseas. In addition, utilizing rice fermentation technology cultivated over many years, we are also working on cosmetics and food development, and we are also developing a direct store to disseminate sake as Japanese culture in Japan and overseas.
