- In 2015 Sylvie Guiraudon set up La Chouette du Chai above the village Cazevieille. Within 260 hectares of holm oaks, and strawberry trees, an old 12th century chapel has been renovated and transformed into a wine-tasting cellar. Today Sylvie and Olivier the cellar master grow 18 hectares of vines in organic and biodynamic viticulture. The estate is established on 2 terroirs : the Combe de Mortiès where the grapes have reached their full maturity and La Figarède where the vines are younger. Each grape and each plot are hand-harvested, vinified separately and blended in stainless steal vat.
