FAMILY STORY

Located on the outskirts of Toulon in the Var, Provence Alpes Côte d’Azur, the familial exploitation of Domaine des PEIRECEDES, created in 1900, unrolls its 50 hectares carpet of vines between Cuers and Pierrefeu, at the Door of the Moors, on the Côtes-de-Provence appellation area and its terroir denomination, Pierrefeu. Nestled on the edge of the Mediterranean Sea, near the Pradet, the Château La Tulipe noire, the «daughter» house of the PEIRECEDES, came to enlarge the production at the arrival of Audrey on the field in 2008. The Baccino Family cultivates 25 hectares of vines planted on the hillside and caressed by the sea breeze. Audrey and Leslie Baccino, 5th generation at the head of the estate, work with Alain and Véronique, their parents, on these lands cultivated in organic farming. The entire production of the two wine entities is worked in the cellar of PEIRECEDES built in 1991 by Alain and Véronique. Reds, whites and rosés bear the name of their lands of origin with well-marked identities. Family of winemakers very united, in which each member occupies a specific function, the Baccino have at heart to preserve the environment. Their cuvées are vinified with infinite precision. And it is Audrey, the oenologist of both areas, who puts her know-how and sense of harmony at the service of the terroir. Do not hesitate to stop in the heart of one of the two tasting cellars to tame the range of vintages of these paired properties and stock up on local products. Good to know: in the vineyards of the PEIRECEDES, you can find scattered bastidons that you can rent a few days during a breakaway winemaker or sports in the region!


VINEYARD AND WINES

“The PEIRECEDES vineyard has been grown organically since 2007. When our parents made the choice to convert the estate, we could really observe the difference in the vines, with the development of biodiversity between the rows and around the parcels,” says Audrey Baccino. In this Provençal region known for its high proportion of dry and aromatic rosé wines, with a pale colour, our estate is one of the « irreducible» red wines that make up 40% of our production. «We make aging cuvées, aged in barrels but that can be drunk tomorrow if you wish,» says the winemaker. Château la Tulipe Noire, meanwhile, is rather renowned for its rosé wines made with Tibouren.
This ancient indigenous grape variety is as aromatic as it is delicate to grow. But the game is worth the candle because it gives wines of a rare finesse with exotic notes. “In the cellar, our approach is the least interventionist possible. We start from the idea that the less we touch the grapes and the more we let the wine, the less we damage them.
That’s why we try as much as possible to stop certain practices like filtration,” adds Audrey. At the time of the harvest, each plot is evaluated with a magnifying glass before being harvested. When Alain and Audrey agree on the maturity of the berries, the harvest can begin. It takes place exclusively at night to preserve the fruit. “When I receive the grapes, I program the press with regard to the quality of the grains.
Everything is thoroughly analyzed. After settling, I select the juices again before fermentation and decide whether or not to blend them at this stage of the vinification,” explains Audrey. For rosés, maceration is long. They are spread over 4 to 48 hours to obtain an exceptional roundness and aromatic persistence.
Perfectionist, the oenologist tastes and re-tastes, with a goldsmith’s patience, until finding the perfect blend. “This moment represents the work of a year. I am looking for harmony, as if to write a musical score.” The containers used to raise the wines, too, are not left to chance. “We work with a family of coopers who allow us to choose our forests, our drying time and even our heaters. It’s exciting because it allows us to bring even more complexity to our cuvées,” concludes the winemaker.
