- The CHATEAU DE CANCERILLES extends over 15 ha of vines under organic cultivation on a generous land clssified in OP COTEAUX VAROIS EN PROVENCE.
It is in the respect of nature, tradition and a quality approach, that Syril GARCIA producer carrefully works his wineyard whithout usin chemical inputs. I chose according to the nature of my soils, climatology and the appellation: grenache noir, syrah, cabernet-sauvignon, cinsault, mourvèdre, ugni blanc, rolles and semillon which I vinify rigorously for the elaboration of white, rosé and red wines of pure tradition.
The modern winery equiped whith thermo-regulated stainless steel tanks guarantees an optimal mastery of the vinification for the elaboration of pale and fruity roses, very expressive whites, and reds powerful and complex.
Always attentive to this unique terroir with sunny hillsides, from my vineyard I raise wines of great character to share , I invit you to discover them.
myself, the owner harvester manages all the projects of the estate, the cultivation of the vine and the winemaking until the marketing.
My cellar is located in Provence in the middle of my vineyards where I produce my grapes and make my wine, white, rosé and red.
The culture of the vine is practiced with the greatest respect for the environment under the label ECOCERT (organic wine in Europe), I practice full tillage, use horse manure as fertilizer and practice short pruning to limit yields.
The harvest is mechanized, to allow a night harvest and thus reduce the temperature of the grapes in order to make finer wines.
Grpe juices are stored at 3°C for about 15 days to promote the extraction of aromas and fat in the mouth.
Inoculate witn selected yeasts and control in thermoregulated stainless steel tanks the alcoholic fermentation températures at 16°C, then I age on the lees to acquire more of complexity in white and rosé wines.
Caseine and bentonite based collage are tested during the alcoholic fermentation, after cristaline and bentonite to achieve protein stability.
The amount of sulphites mesured is kept to a minimum for each wine.
Bottling is done by a bottler on the property.
