Description
In the south of the appellation, a small road lined with olive, pine and almond trees leads to Domaine de Saint-Paul, a confidential winery. Its history is a recent one: the building, created in 1934, was bought in 1958 by Charles Establet, then by his daughter Christiane and her son-in-law in 1970. With the construction of a storage cellar, followed by a vinification cellar and bottling line, they gave it a new lease of life.
The name “Domaine de Saint-Paul” appeared on the label in 1998. Next came the
tasting room and sales to private customers. From 2005 onwards, when their children took over, wooden vats and an ageing cellar with demi-muids and oak foudres further enhanced the quality of wine-making and ageing.
The 13.5 hectares of Domaine de Saint Paul are spread over 5 renowned parcels in the south of Châteauneuf-du-Pape: les Coulets, la Combe, Pied Redon, le Boucou, les Relagnes and Palestor. Planted with vines that have never been weeded, these precocious terroirs with red soils of rounded pebbles, pebbles and limestone produce wines that are both subtle and intense, with bursting fruit.
