Description
Domaine De L'Enviegne is a very young winery I have created in 2021. Before this opening, I was working in the management in the hospitality industry for over 14 years. But in 2020, I felt I needed a change in my professional life. Thanks to quality support, I resumed my studies to prepare for a BTS in agriculture viticulture and oenology at the Agrosp Institute in Dijon (Burgundy) in order to acquire the knowledge necessary for this reconversion.

The gradual establishment of the estate extends over a little less than 4 hectares located in the towns of Ballaison and Douvaine (74), half of which is very recently planted and the other half in old vines, some of which are more than 60 years old.
The historical grape variety is Chasselas Blanc, for the old vines and the plantations were made of Pinot Noir, Altesse and Mondeuse Noire. It has been favoured for planting, the use of massal selection to bring diversity to the plots, and grass cover is maintained to limit soil erosion and thus preserve ecosystems.
In the vineyard, cultivation is done according to organic specifications, treatments are carried out with reduced doses of copper and sulphur, all supplemented with fermented plant extracts.
The tillage is superficial, the plots are mostly sloping and the mechanical passages are only done in a crawler way, which means that the soil is not compacted.
A lot of work is done in accordance with the lunar calendar, such as pruning, green work and also the harvest.
The harvest is manual, in 20kg boxes, so as not to crush the grapes and thus promote further fermentation.
This is either carbonic, macerated for more than 2 weeks, or directly pressed, which following a simple settling, triggers a spontaneous fermentation with indigenous yeasts which will take place in vinification without inputs until bottling.
This is carried out after maturation on total lees for more than 9 months, in vats or barrels. Bottling also follows the lunar calendar, there is no filtration or fining on the wines, which allows the aromatics of the wines to be preserved and allow them to express the full potential of this grape variety.
