- In 1999, I decided to settle on the family lands as a winegrower, and to work the vines planted a few years earlier by my father. I decided to plant vines on the Noirots plot, which was cultivated and harvested by my grandmother Julia. In 2010, I converted the estate to Organic Agriculture and have been applying biodynamic preparations since 2016. Since 2021 the estate has been Demeter certified. The vines are therefore cultivated without chemical fertilizers, herbicides or synthetic products. The harvests are manual and the grapes are vinified as naturally as possible in order to avoid deviations and to allow the wines to retain all their aromas and complexity, sulphites are used sparingly while respecting the Demeter specifications. In 2016, I started working 1 ha on the Noirots plot with my Comtoise mare Absinthe. Working with the mare helps avoid compacting the soil and gives more finesse to the wine. The cuvée from this plot is a red Burgundy named Destrier. As the years go by, my business develops, so I was able to plant new plots. Today, the Domaine has 8 ha of vines in production (3 ha of white and 5 ha of red). The soils are clay-limestone with Kimmeridgian marl. The philosophy of the Domaine is to vinify in plots, in order to be able to extract the best aromatic profiles from each plot.
