- The rare sake rice "Kinmonnishiki" is produced in a very few regions, one of which is Kijimadaira-village that is known for its heavy snowfall. Due to its difficulties in growing, the rice was once threatened with decline. However, the production recovered again through health mutual relationships and competitive working environments. Thus in 1988, Fukumitsuya started using Kinmonnishiki for its sake. The unique climate in the mountain area and minerals from snow help make the rice great to make a rich-flavored sake. Seven years of aging gives the sake very elegant flavor with sharpness with its acidity and body in sake. Goes well with poilee of sole, bouillabase or Tuna sashimi marinated with soy sauce.
