- Clean, bright, transparent wine from golden to intense amber in color. With an aroma of nuts and wood typical of its double aging, biological and oxidative, and may present notes of varnish and a dry and light, acidic and very persistent flavor. Amontillado is obtained from a fine wine, which under normal conditions ages in the winery with certain characteristics. Once the required minimum of five years has been exceeded, fine wine can lose its floral veil naturally or by deliberate decision, through alcoholization. After the biological aging phase, a subsequent oxidative aging phase begins for at least three years, which progressively increases the alcoholic level and gives the wine unique physicochemical and organoleptic characteristics.
